Chicory, radicchio, shallot and parmesan salad

Ingredients

 

1 Chicory

1 Radicchio

1 Shallot

Parmesan to shave

Raspberry and mustard rapeseed oil dressing

 

Method

 

Pick chicory leaves, discarding any outside leaves that are not crisp

Pick radicchio leaves and tear in half vertically

Finely slice shallot

Using a peeler or knife shave parmesan as finely as possible

Toss all of the ingredients in a bowl and season. Dress with raspberry and mustard rapeseed oil dressing
