Chilli Chicken Noodles

Ingredients

2 Chicken breasts diced
½ freshly chopped chilli (can be dried chilli flakes)
2 cloves garlic chopped
½ diced red onion
250g fresh egg noodles

3 tbsp cold pressed rapeseed oil

2 tbsp soy sauce

Coriander leaves to garnish


Method


Heat the cold pressed rapeseed oil in a wok (or frying pan) over medium heat. Add the diced chicken breast, chopped onion and garlic and cook for 3-4 minutes on each side or until golden brown and cooked through.

Add the chopped chilli and soy sauce and cook for a further 2 minutes coating the meat in the sauce.

Add the noodles and cook for a further 2 minutes, mixing the noodles and chilli chicken.


Serve with a few fresh coriander leaves
