Basil, mint and cashew pesto

1 large bunch of basil

1 large bunch of mint

1 clove of garlic

Cold pressed rapeseed oil

100g cashew nuts


1, Remove all basil and mint leaves and place in pestle and mortar (or blender).

2, Finely slice garlic and add to pestle and mortar with nuts and herbs (or blender).

3, Blend to a rough paste.

4, Keep blending or mixing, gradually adding oil until you have a medium consistency.
