Caramelised apple, black pudding, smoked bacon and rocket salad

4 inch piece of rindless smoked bacon

6  1cm slices of black pudding

2 eating apples

4 handfuls of rocket

Demerara sugar

Raspberry and mustard dressing

Parmesan to garnish


1, Core apple but leave whole. Carefully slice into 1cm slices horizontally, place on a lined baking sheet.

2, Give apple slices a good coating of Demerara sugar, roast at 200c for 15 minutes until caramelised.

3, Cut bacon into thick lardons.

4, In a frying pan on a medium heat once apples have been cooking for 5 minutes fry bacon until crisp in  rapeseed oil. Set aside in kitchen paper to drain.

5, In the same pan fry black pudding until crisp on both sides.

6, Take fine shavings of parmesan and mix with rocket lightly dress with raspberry and mustard dressing and a little seasoning.

7, To serve alternatively layer black pudding and apple on plate or serving dish. Mix bacon into salad reserving a few lardons. Carefully place salad on top of apple and black pudding finish with a few lardons around outside,  a drizzle of Cold pressed rapeseed oil and plenty of freshly milled black pepper.
