Chilli, garlic and mint prawns

12 king prawns  ( shell on )

2 cloves garlic

Small bunch mint

Chilli and garlic dressing


1, In a blender or mortar and pestle add mint and garlic with seasoning.

2, Blend until a thick paste gradually add chilli and garlic dressing until loose and incorporated.

3, Cover prawns in infused oil and leave in fridge for 4 hours to marinate.

4, In either a frying pan or on a barbeque cook prawns for 6 - 8 minutes until cooked ( smaller or larger will take more or less time ) finish with a good squeeze of lemon.
