Chilli, garlic and parsley mussels

40 mussels or however many you fancy

2 white onions sliced

2 cloves of garlic

Good glug of chilli and garlic dressing

2 glasses white wine

Handful of flat leaf parsley

A few knobs of cold butter

Plenty of crusty bread


1, Fry the onions and garlic off in chilli and garlic dressing with a pinch of salt.

2, Add on a high heat mussels and cook for 1 minute.

3, Add wine and reduce by half until becoming thick.

4, Add chopped parsley, seasoning and butter, put lid of pan on and swirl vigorously to emulsify sauce.
