
Chimichurri Sauce

Ingredients
1 bunch coriander (30g)
1/2 bunch mint
1 bunch flat-leaf parsley,
2 garlic cloves, peeled
1/2 green chilli, deseeded and finely chopped
6 tbsp rapeseed oil
Juice and zest of 1/2 lemon
A good pinch maldon salt
A small pinch caster sugar
Method
In a pestle and mortar add the garlic, sugar and salt and smash it up to a rough paste.
Tear all the herbs and add to the pestle along with the chilli lemon juice and zest and get pounding again then mix in the oil check seasoning and serve.
