
Pigeon breast, rocket, beetroot, apricot, apple and Hazelnut salad

Ingredients
4 pigeon breasts
rocket lettucehazelnuts (optional)
apple
apricots
beetroot
Raspberry & mustard dressing
Method
1. pan fry the pigeon breast in a hot pan for 2 minutes either side, then remove to rest in a warm place
2. mix all the remaining ingredients together and dress with the Raspberry & mustard dressing 3. slice the pigeon breasts and serve on the bed of mixed salad
