Pork fillet wrapped in serrano ham and sundried tomato pesto with sauté potatoes and roasted hispy cabbage

2 x Pork fillet                                                                                   
2 hispy cabbage (halved)
1 pack of serrano ham                                                             
new potatoes
1 jar of sundried tomato pesto                                           
tarragon mustard mayonnaise

1. preheat oven to 180 degrees
2. lay the serrano ham on a strip of cling film (30cm x 30cm) and spread the pesto over the ham evenly.
3. lay the pork fillet on the bottom edge of the ham and roll as tightly as possible, then place in the fridge for 10 minutes.
4. meanwhile, cook your new potatoes until soft.
5. remove the pork from the fridge and take off the cling film.
6. place the halved hispy cabbage into a roasting tin and drizzle with oil
7. lay the pork fillet on top of the hispy cabbage and roast for 25 minutes
8. saute the cooked new potatoes until golden
9. remove the pork from the oven and slice the pork.
10. serve on a bed of sauted potatoes with Tarragon mustard mayonnaise
