Sour cherry and Nut granola

350g cups jumbo oats                                                     
120g coconut flake
120g flaked almonds                                                       
 120g pecan halves
1 Tbsp Demerara sugar                                                   
1/4 tsp sea salt
3 Tbsp rapeseed oil                                                           
100g local honey (or best quality)
1 tsp vanilla extract                                                             
140g dried sour cherries


Preheat oven to 160c, in a mixing bowl, combine all dry ingredients (expect cherries) and mix thoroughly with oil, honey and vanilla extract.

Spread evenly onto a baking sheet lined with parchment paper and bake in the oven for 35 mins, (if you fancy your granola super chunky break up after it has baked however if not then aggravate every 10 mins)

Remove from the oven and leave to cool, then mix with the cherries and serve.
